Santa's Shortbread Cookies
I promised recipes and there is nothing Santa loves more than cookies. And to me, nothing says Christmas cookies like shortbread cookies. Here is the one Mrs. Claus makes for me:
1 1/2 cups of sugar
1/2 cup of shortening
2 eggs
1/2 cup of butter
2 teaspoons of cream of tartar
2 3/4 cups of all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup more of sugar
2 teaspoons of ground cinnamon
1) Heat your oven to 400 degrees F
2) In a large bowl, combine 1 1/2 cups of sugar with the shortening, eggs and butter. Mix in flour, cream of tartar baking soda and salt.
3) Shape dough into balls, about 1 1/4 inch each. Mix the remaining sugar and the cinnamon. Coat the balls in the cinnamon and sugar mixture. Place them on an ungreased cookie sheet,
4) Bake for 8-10 minutes. Remove from the oven and place on a wire rack to cool.
5) Save some for Santa!!
